Stir-Fried Okra

Okra is one of my favorite vegetables. I remember my parents having to force me to try it when I was young and I have loved it since then. It is delicious stir-fried with shrimp, belachan, or fresh chilies, or just plain salt and pepper (which it is here). I would normally make this dish or another vegetable dish along with the Stir-Fried Soy Sauce Chicken to serve with rice.

2 tablespoons vegetable oil
1 small shallot, sliced thin or minced
3 cloves garlic, sliced thin or minced
1 package (16 oz) frozen cut okra
1 cup water
1 teaspoon salt or to taste
½ teaspoon white pepper or to taste

Heat the oil in a nonstick skillet over medium-high heat until shimmering. Add the shallot and garlic and cook until fragrant and lightly browned, about 30 seconds. Add the frozen okra (no need to thaw first) and water and stir-fry it until it is tender. Season with salt and white pepper to taste. Serve hot with rice.

    The combination of dishes (stir fried okra and stir fired soy sauce chicken) is very true.. I still remember it clearly, and sometimes I do the same too… Another dish which is always served together with these dishes, is steamed egg… ;)

    Ahh…steamed egg…yummy! I don’t make steamed egg too often over here because I don’t like to bother with the steamer too much. :) I do miss it a lot though now that you reminded me. Got to make it soon. :) Other than okra, I like to make stir-fried green beans with eggs to go with the soy sauce chicken too. Now, I’m salivating!
